We brew our house lagers — a golden light beer and a rich dark beer — and pull the Belgian classics beside them: Leffe, Hoegaarden, Grimbergen, Guinness. The kitchen keeps the same spirit, from morning Belgian waffles and mussels in white wine to steaks, ribs and burgers on Belgian fries.
Inside it's warm and a little theatrical — chandeliers built from old windows, walls papered with banknotes left by travellers from every corner of the world. In summer the terrace spills onto the square. Everyone is welcome under the Colonel's roof.
